Holiday Raw Vegan Cheesy Kale Chips
Well, it’s official, the Holidays are here. And what better way to start them off then with a healthy dish to share with family and friends. It is easy to get carried away with sweets and treats we reserve for this time of the year. One way to stay healthy is to eat foods high in nutrition. Who said nutritional foods don’t have to taste good? Stefanie, one of the teachers here at Hot Yoga Naperville, made a bowl of these chips for the holiday party we had a couple of weeks ago. The only thing people had to say about this dish was…”What happened to the bowl of kale chips?” It was literally gone in minutes. After several people asked Stefanie for the recipe we decided to post it on the web so you can try it for your self. RAW VEGAN CHEESY KALE CHIPS
Ingredients:
1 large bunch of kale
1 cup cashews (soaked for 2 hours and drained)
1 red bell pepper, seeded and chopped
4 tablespoons fresh lemon juice
1 tablespoon agave or honey
2 tablespoons nutritional yeast
¼ teaspoon onion powder
½ teaspoon turmeric powder
½ teaspoon Himalayan sea salt
Directions:
Rinse and spin dry kale. Remove stems and tear into large pieces. Let kale air dry as much as possible. Blend all other ingredients in a Vita-Mix until smooth to make the “cheesy sauce.” Put kale in a large bowl and pour over the “cheese sauce.” Mix well using your hands to evenly coat the kale. Place kale on the dehydrator trays. Dehydrate at 118 degrees overnight or until coating is dry and kale is crispy.
